Recently our culinary team visited with some amazing local suppliers to learn how their businesses operate on a daily basis and better understand how they produce the quality food & beverage products that are served in our Niagara Parks full-service restaurants.

As a proud participant of the Feast On program, Niagara Parks is committed to sourcing Ontario grown and made food and drink. We often discuss how supporting our local economy and Ontario’s farmers is important for helping build our local food identity, putting dollars back into our communities and limiting environmental impact, but having the opportunity to visit these sites with our staff and take in all the passion and hard work first hand was a valuable experience.

The day began at Savoia Hors D’Oeuvres in St. Catharines. Here, owner & chef Oscar Turchi works with his staff to create beautiful bite-sized works of art in over 250 varieties, selling over 5000 per week during the busy season to the Niagara and Toronto markets.

Next up was Tide & Vine Oyster House. From humble beginnings shucking and serving oysters across Niagara from a camper van, this local success story now boasts an exciting menu featuring some of the freshest seafood in Ontario.

Luckily for our chefs, they prepared a few of their signature dishes for our visit!

The final stop of the day was at Oast House Brewers, a craft brewery located in Niagara-on-the-Lake. Anyone who frequently dines out in Niagara will likely recognize their popular Barnraiser Ale, which is available on tap at our restaurants, but this growing operation offers a wide variety of brews and something for every palette. Their production area was in full-swing on this day with staff split between brewing and canning duties.

Our culinary team headed back to their respective restaurants for the afternoon with full stomachs and more importantly an enhanced appreciation for the talent and dedication of our local food and beverage suppliers, special thanks to Savoia Hors D’Oeuvres, Tide & Vine Oyster House & Oast House Brewers for accommodating us!

Elbert Wiersema C.F.B.E. is the Executive Chef at Elements on the Falls. Born in Holland he graduated with a culinary degree in 1985 and went on to work for a number of establishments in Paris, London and Bermuda before moving to Canada in 2002. His philosophy and styles are firmly rooted in Classic French cuisine with Pacific Rim and Caribbean undertones.
