Niagara Parks Set to Showcase Culinary Mastery During Chefs’ Signature Dinner

Niagara Falls, ON – Niagara Parks is pleased to welcome guests to an unforgettable culinary experience at the Chef’s Signature Dinner on Friday, April 4.

This special evening will showcase the talents of five renowned Niagara Parks chefs and their culinary team as they collaborate to create an extraordinary five-course meal featuring locally sourced ingredients and innovative flavour combinations, perfectly paired with VQA wines from some of Niagara’s top wineries. Set against the breathtaking backdrop of Niagara Falls, Table Rock House Restaurant offers the ideal setting for this exclusive event, which begins at 6 p.m.

For the first course, guests will enjoy a rich and velvety Spicy Caramelized Leek and Parsnip Bisque, crafted by Chef Bill Greenan and perfectly complemented by the crisp notes of an Unoaked Chardonnay from Fielding Estate Winery. Next is Chef Gary Schroeder’s Beet Salad, a fresh and earthy dish, elevated by the bright acidity of a Dolomite Riesling from Cave Spring Vineyard.

The third course features Chef Matt Hemmingsen’s exquisite Pan-Seared Scallops, where delicate seafood meets the bold, fruit-forward character of Henry of Pelham’s Old Vines Baco Noir. Guests can cleanse their palates with a refreshing Lemon Sorbet drizzled with Passion Fruit and Raspberry in preparation for the main course.

The main entrée features Chef Chris Totah’s classic Beef Wellington—tender beef wrapped in flaky pastry—paired with the deep, complex flavours of a Generations Red from BOTL.

The evening concludes on a sweet note with Chef Rick Bieber’s Rhubarb Ginger Crème Brûlée, a perfectly balanced dessert offering a hint of tartness and spice, matched with a luscious Vidal Icewine from Bella Terra Vineyards.
